Ahh, didn't know you were on about the Mouth of Sauron.
Not many people have seen the extended editions and wouldn't know who he is.
Either disk 3 or 4 will tell you why they decided to make the area around his mouth split when he talked.

The 3rd movie is still the best for me.
The first one benefits most from the Extended Scenes, but the overall print quality on the DVDs isn't very good (very muted and uneven)
Waiting for the Blu-Ray versions...should be pretty sweet.

They're all good. Each one adds a little extra something. It's a much better experience than the theatrical films.
